Khlong Toei Market is Bangkok's great fresh-produce market: meat, fish, fruit, vegetables, herbs and spices arrive by truck every day, for restaurateurs and local residents alike. It is not a tourist market, with no souvenirs and no stalls designed for visitors: you come to see how the city feeds itself, preferably early in the morning. Entry is free. Allow an hour to an hour and a half, wear sturdy closed shoes and keep an open mind: the floor is wet, the aisles are narrow and the trolleys move fast.

Under tarpaulins and awnings, stalls of fruit, leafy greens and chillies follow one another along alleys where the crowd never stops moving. It is the best place in Bangkok to see seasonal Thai produce as wholesalers sell it: mangoes, rambutans, fresh herbs, limes, aubergines of every size.

The meat and fish halls are the most impressive part, and the rawest: carcasses are cut up right on the stall. If that bothers you, stay in the fruit and vegetable aisles. Always ask permission before photographing a person.

Herbs, curry pastes and spices

The sellers of curry pastes, spices, lemongrass, galangal and kaffir lime leaves are the reason cooking schools bring their students here. If you take a Thai cooking class in Bangkok, you will see these ingredients up close; if you buy any, take small quantities.

Small food stalls

Tips

Come in the morning, when activity is at its peak; by early afternoon few stalls remain. Wear closed, non-slip shoes, not sandals: the floor is slippery. Keep your belongings in front of you in the narrow aisles and avoid large bags. Prices are those of local traders, with no price tags: ask before tasting or buying. The market borders a working-class neighbourhood: stay respectful, do not photograph people without their consent and do not come as a noisy group.
